General introduction

The PILOTS project works to roll out the use of alternative vegetable raw materials in quality food products. It aims at demonstrations and knowledge sharing in the Flemish food industry and in industrial kitchens. They are shown the way to processing with the new raw materials, both with conventional and new processing technologies. 


Research approach

Using generic cases, model products are developed that demonstrate different process technologies. These demonstrations serve as inspiration for companies and mass caterers. The technical knowledge and applications are actively transferred through interactive training, lowering the threshold for implementation.


Relevance/Valorisation

We expect that the PILOTS project will help food companies to process alternative plant-based ingredients into products and market them faster and more frequently. Large-scale kitchens will also improve their processes so they can prepare plant-based meal components more efficiently. Finally, companies and mass kitchens will hopefully invest in the (newer) technologies shown, for example for production, regeneration or reheating.
