Protein changes in fish silage produced using different combinations of undersized quota species

    Abstract

    Aim: Investigating protein changes in four types of fish silage, each produced using a different combination of undersized Belgian quota species. The goal of this research is to determine the stability of the proteins in the silages over a 3-month time period and to ascertain the effect of raw material combination (RMC) on silage characteristics.

    Conclusion: There seems to be an effect of RMC on fish silage characteristics in this experiment. More complex RMCs (FE/FCD) exhibited a stronger decrease in crude protein content (CP) over time. Accordingly, these complex RMCs also showed a slower but longer hydrolysis (DoH) compared to less complex RMCs (SS/FC). As hydrolysis continues, ammonia (NH3) is released due to the hydrolysis of amino acids (Haaland, 1989). This leads to a loss of protein-N and a decrease in nutritional value. Since total volatile nitrogen (TVN) in fish products is the product of trimethylamine (TMA) and NH3 (Haaland, 1988), the increase in TVN in this experiment can mainly be contributed to the release of NH3. Product pasteurization could limit hydrolysis, minimizing protein losses.
